GS Notes

Small notes on bread, bikes and home tinkering. Mostly for my future self.

Rye starter, week three

The starter finally doubles in about six hours at room temperature. What changed: switching to a 1:2:2 feed and keeping the jar off the windowsill. The first loaf was dense but edible; the second one, with a longer cold proof overnight, had a much better crumb. Next time: less water, the dough is already sticky enough with whole rye.

Rebuilding the rear hub

The old commuter bike started clicking under load. Opened the hub: dry grease and two pitted balls. Replaced all the balls, cleaned the cups, fresh grease, adjusted the cones until there was no play and no grinding. Took three attempts to get the cone tension right. Quiet again, at least for now.

A thermometer that actually logs

Wired a cheap temperature sensor to a small board and let it write a reading every ten minutes. The balcony gets surprisingly hot in the afternoon — up to 41 °C in late August, which explains why the herbs keep wilting. Moving the pots to the other side this week.

Notes on notes

Tried three different note apps this year and ended up back at plain text files and this page. Fewer features, fewer decisions. If something is worth remembering, it goes here; if not, it was probably not that important.
